This gluten and dairy free tantalizing pizza crust is as close to a deep-dish New York style pizza crust as I have ever eaten. The cassava flour gives it a nice fluffy crust while the yeast helps give it that bread flavor you remember. Add a few herbs and enjoy the tantalizing taste of this gluten and dairy free pizza.

Bring Back Pizza Night!

Pizza and a movie. Or, enjoy a football game! A relaxing evening we all can appreciate. However, when I could no longer eat gluten or dairy, this evening changed quite a bit until now.

I’ve tried lots of gluten and dairy free pizzas, but the crusts are all either cracker thin, very crispy or chewy. I also missed the mixtures of tantalizing spices not found in frozen gluten free pizzas. I am not saying that they are all bad. However, non of them satisfied my wish for a classic New York style deep dish pizza with a soft crust perfect for dipping into delicious pizza sauce.

While the crust from this recipe is not yet a true deep-dish pizza, I once again anticipate movie nights and the tantalizing taste of pizza.

How to Save Time Proofing Your Dough

I learned a few years ago the best trick to save time while waiting for dough to rise. Whenever recipes said to put the dough in a warm place and rise until doubled in size, it would take about two hours. We live in one of our country’s very cold, northern states. Thus, our house stays a little chilly. Thinking it impossible, I avoided making dough from scratch. However, a few years ago I realized that my oven on its lowest temperature created a warm environment for the proofing time. Another option, you can place the bowl full of dough on top of a wood stove.

By setting my oven to 170 degrees Fahrenheit, I created the perfect degree of warmth to make the dough rise in just 20 minutes rather than an hour or two! Just cover your oven-safe bowl with plastic wrap or a moist, clean cloth to keep the dough from drying out. If you use a moist cloth, make sure it hangs over the bowl away from the dough.

While rising, enjoy making the tantalizing pizza sauce. If you love to nibble while cooking, toast a few pieces of toast. It is the perfect way to test the flavor of your sauce.

Can You Make Your Own Pizza Sauce?

Yes! If you have ever read the nutrition label on a jar of pizza sauce, then you know it only takes a few ingredients to make your own. In fact, you can make most tomato-based sauces with a can of tomato sauce and a numerous spices. This sauce has a medium thickness. If you want a thicker sauce, add a can of tomato paste.

To make your own pizza sauce, I suggest starting by sauteing a few cloves of minced garlic in olive oil. Then add a can of tomato sauce. Next, add your seasonings. Use the seasonings listed on the label of your favorite store-bought pizza sauce or dress it up even more. I like to use garlic powder, onion powder, Italian seasoning, oregano, basil, parsley, and sometimes even a touch of cumin, paprika, or turmeric.

Gluten and Dairy Free Pizza Crust Ingredients

This recipe makes one medium-sized pizza.

  • 1/2 cup of warm water (approximately 105-110 degrees Fahrenheit)
  • 2 1/4 tsp of active dry yeast (1 packet)
  • 1 tablespoon of honey
  • 1 cup of cassava flour
  • 5 tablespoons of arrowroot flour
  • Coconut flour, 1 TBSP
  • Salt, 1 tsp
  • Garlic powder, 1 tsp
  • Italian seasoning, 1 teaspoon to 1 Tablespoon
  • 1/4 cup of olive oil
  • 1 egg

Toppings in Addition to Cheeses

Meat Lovers: sausage, pepperoni, and bruschetta

Barbecue Chicken: barbecue sauce mixed into pizza sauce, barbecue chicken

Vegetable: spinach, cooked green pepper and onions, chopped tomatoes, mushrooms

Directions:

Prepare the Gluten and Dairy Free Pizza Dough

To start, preheat your oven to 170 degrees Fahrenheit.

Measure out a 1/2 cup of warm water (approximately 105-110 degrees Fahrenheit – warm to the touch, but not steaming hot.)

Stir 1 tablespoon of honey into the warm water which feeds the yeast.

Add 2 1/4 teaspoons of dry active yeast to the water and honey mixture.

To activate the yeast, set mixture aside for about 5-10 minutes.

In a mixing bowl add the following dry ingredients:

1 cup of cassava flour

5 tablespoons of arrowroot flour

1 teaspoon of salt

Italian seasoning, use 1 teaspoon to 1 Tablespoon depending on your preference.

By this time, the yeast in the water and honey mixture should be foamy. If not, then your yeast may be expired or the water was too cold or too hot.

Using the same bowl or measuring cup, mix together 1/4 cup of olive oil and one egg.

Add the egg mixture and the yeast mixture into the bowl of dry ingredients.

Use a fork to mix them together. Then use your hands to form a dough ball.

Proof the Gluten and Dairy Free Pizza Dough

Place the dough ball in an oven-safe bowl and cover it with plastic wrap.

Allow the dough to rise in the preheated oven for 20 minutes. The dough will rise slightly.

Remove the dough from the oven.

Then place your pizza stone or baking sheet in the oven and preheat it to 475 degrees.

Build Your Pizza

Next, lightly flour a piece of parchment paper with cassava flour.

Then, remove the dough from the bowl and place it on the floured parchment paper.

Use your hands to press the dough out into a circle that is roughly 1/8-1/4 inch thin. (dust your hands in cassava flour if the dough is sticky)

Add your preferred toppings: chopped sausage, cooked onions, pepperoni, spinach, or a delicious barbecue sauce chicken

Life the whole piece of parchment paper with the pizza on it and place it on the preheated pizza stone.

Bake for 12-15 minutes until the crust is slightly golden and the toppings are melted.

Homemade Pizza Ideas

Here are a few classic pizza ideas as well as a few fun ones to try out!

Cheese Pizza – Pizza sauce and your favorite dairy-free cheeses. (Look for brands like Daiya. Their products are typically available in Walmart, Target, and high-end grocery stores)

Cheese and Pepperoni Pizza – Pizza sauce, dairy-free cheeses, and pepperoni or turkey pepperoni.

BBQ Chicken Pizza – BBQ sauce as the base layer, diced chicken tossed in BBQ sauce, sauteed onions, and your favorite dairy free cheese.

Hawaiian Pizza – Pizza sauce, ham, pineapple, and dairy-free cheese.

Breakfast Pizza – scrambled eggs, sausage, and dairy-free cheese.

Taco Pizza – Cheese sauce, taco meat, sauteed onions and peppers, freshly diced tomatoes, lettuce, avocado, and Fritos corn chips. My husband loves this with Doritos if you are able to eat dairy. You could also add black beans as a protein source in addition to or instead of the taco meat.
