A Tip for Making Beef Tallow
If you decide to make beef tallow, here is one tip that improves the nutritional benefit of your beef tallow. Keep the temperature low. Even though beef tallow has a much higher heat point than olive oil, high temperatures damage oil. When oil smokes, it is burning causing a cellular molecular change that causes free radicals to form, a carcinogenic (cancer). While melting the beef fat into a healthy oil, it is important to keep the temperature low, stay in the kitchen, and use a stainless steel pot. Once canned, the tallow is an amazing clear oil.
